Recipes I Make on Repeat From June through September:

If you’re looking for easy summer entertaining recipes, these five go-to dishes for my summer table always have a spot from June through September. Summer is meant for relaxing. No one wants to be slaving away at the stove, and these recipes are special enough for entertaining without being overly complicated. Two appetizers, a gorgeous salad, and two seafood entrees come together to create a simple summer dinner party menu that feels both effortless and special.
I don’t know about you, but while I love all the warm and cozy recipes of fall—and of course the show-stoppers of the holiday season—one of my favorite cooking seasons is actually summer. Something about the light, fresh ingredients (many of them straight from the garden!), the gorgeous al fresco tablescapes, and the casual poolside gatherings just eases my spirit.
Maybe it’s because I’m a teacher and the break from the September-to-June school year allows for more time at home. Perhaps it’s because some of my favorite summer memories revolve around food, family, and gathering around a table. Whatever the reason, summertime has always felt a little magical to me. Sitting on the porch with a book, walking the neighborhood with the girls in their stroller, lounging by the pool, or hosting friends around my big outdoor table all bring me that nostalgic-childhood-summer -vacation joy.
On my table this month…
The past month has seen plenty of light and bright dishes on my table, but these are the recipes I find myself returning to again and again. If I’m being honest, I can’t decide which is my favorite. The Bang Bang Shrimp Tacos make their way into our regular dinner rotation because I’ve always loved tacos and anything built around layers of flavor and texture. The crunchy slaw, crispy shrimp, creamy sauce, and fresh toppings all wrapped in a soft tortilla get me every time. Then again, the Crab Rangoon Egg Rolls feel like such an indulgent treat while somehow still tasting perfectly suited to summer, packed with sweet crab, bright lemon zest, and that spicy-sweet cherry dipping sauce.
Of course, the Peach Panzanella celebrates everything I love about summer produce, the Fried Zucchini is a delicious way to use up garden abundance, and the Crab-Stuffed Monkfish feels elegant enough for guests while still being surprisingly simple to prepare. Together, these five recipes are my go-to dishes for summer entertaining. The assorted ingredients—crab, zucchini, shrimp, peaches, cucumbers, and fresh herbs—practically sing “Summertime,” and if you’re familiar with the Gershwin classic, you know that’s about as high a compliment as I can give.
1. Crab Rangoon Egg Rolls

If I had to pick the recipe that surprised me most this summer, it might be these Crab Rangoon Egg Rolls. Inspired by the takeout appetizer we all know and love, they take everything that’s great about traditional crab rangoons—the sweet crab, creamy filling, bright lemon zest, and crispy exterior—and wrap it into an irresistibly crunchy egg roll.
What really makes this recipe special, though, is the spicy-sweet cherry dipping sauce. It’s unexpected, a little bit different, and somehow manages to make the entire dish feel perfect for summer entertaining. These are the kind of appetizers that disappear almost as quickly as they hit the table, and I can never seem to make enough of them.
Whether you’re hosting friends by the pool, bringing an appetizer to a backyard gathering, or simply treating yourself to something a little indulgent, these egg rolls are always a hit.

2. Crispy Fried Zucchini

If the Crab Rangoon Egg Rolls are the indulgent appetizer on my summer table, then these crispy fried zucchini slices are the nostalgic one.
Every summer, gardeners seem to find themselves with more zucchini than they know what to do with. Whether it’s from your own backyard garden, a neighbor dropping off extras, or an impulse purchase at the farmers market, zucchini has a way of multiplying this time of year.
For me, though, fried zucchini will always be tied to memories of my Grandma Jane. Long before trendy vegetable side dishes and air fryer recipes filled social media feeds, she was turning fresh summer zucchini into golden, crispy rounds that disappeared almost as quickly as she could make them.
What I love most about this recipe is how perfectly it fits the rhythm of summer entertaining. Unlike a formal sit-down appetizer that demands everyone’s attention at once, these can sit on a platter while guests help themselves between dips in the pool, games of chase with the kids, and leisurely conversations over a cold spritzer. They’re easy to grab, easy to share, and somehow always the first thing to disappear.
Served alongside the Crab Rangoon Egg Rolls, they create the kind of relaxed appetizer spread that encourages people to linger a little longer before dinner. And when zucchini season is at its peak, I honestly can’t think of a better way to use it.

3. Summer Peach Panzanella Salad

If summer is the season of fresh ingredients, then this Summer Peach Panzanella Salad is its greatest celebration.
Sweet peaches, juicy grape tomatoes, crisp cucumbers, and fragrant basil come together in a way that somehow tastes even better than the individual ingredients themselves. The peaches bring that fleeting, only-here-for-a-few-weeks flavor that makes summer produce so special, while the basil is often snipped straight from my herb garden moments before serving.
And then there’s the toasted sourdough.
For all the fresh vegetables and fruit in this salad, it’s the crispy bread and creamy mozzarella that make it feel substantial enough to satisfy. It’s still light and refreshing, but somehow manages to eat more like a meal than a side dish.
Every time I serve this salad, people go back for seconds. Apparently, a salad built around toasted bread is a crowd-pleaser. Who knew?
Whether paired with grilled meats, served alongside a larger summer spread, or enjoyed as a light meal on its own, this is one recipe I find myself making on repeat all season long.

4. Crab & Shrimp Stuffed Monkfish

If I had to choose the recipe on this list that feels the most impressive while requiring the least amount of effort, it would be this Crab & Shrimp Stuffed Monkfish.
The stuffing comes together in just a few minutes by simply mixing the ingredients in a bowl, and because everything bakes together in the oven, it’s an ideal recipe for entertaining. There’s no juggling multiple pans or trying to time several components at once. When it’s ready, every serving can be plated and brought to the table at the same time.
Despite how simple it is to prepare, the finished dish feels undeniably special. The delicate white fish, rich crab and shrimp stuffing, and bright lemon butter sauce create a restaurant-worthy presentation that’s elegant enough for a dinner party yet approachable enough for a casual summer gathering.
What I love most, though, is that it still feels light. The mild fish, fresh citrus, and seafood-forward stuffing capture everything I love about summer cooking: simple ingredients, fresh flavors, and dishes that feel a little bit elevated without being fussy.

5. Bang Bang Shrimp Tacos

And finally, the recipe that probably appears on my dinner table most often: Bang Bang Shrimp Tacos.
I’ve always loved tacos because they’re endlessly adaptable. They’re the perfect “shop your own refrigerator” meal, capable of turning whatever ingredients you have on hand into something that feels intentional and satisfying. While these shrimp tacos require a little more planning than a basic taco night, most of the ingredients are pantry and refrigerator staples in my house. Frozen shrimp, broccoli slaw, spices, cornstarch, and the ingredients for the homemade bang bang sauce are almost always within reach.
What I love most about this recipe is the contrast. Crispy shrimp, crunchy slaw, creamy sauce, fresh scallions, and soft tortillas come together to create layers of flavor and texture that feel far more complicated than the recipe actually is.
They’re casual enough for a weeknight dinner, fun enough for a backyard gathering, and guaranteed to disappear whenever I serve them. Add a margarita, a warm summer evening, and a few friends around the table, and you’ve got everything you need for a perfect summer meal.
